@joechef_! Take a classic spaghetti dish for example, ever considered making it with chickpeas?
Ingredients (serves 4):
320 g Barilla Spaghetti
1 can drained chickpeas
4 egg yolks
120 g pecorino
2 tsp smoked paprika
1 tbsp extra virgin olive oil
salt
black pepper
Method:
1. Preheat the oven to 200°C.
2. Drain and dry chickpeas with a paper towel. Transfer to a lined baking tray, toss in the olive oil and sprinkle with salt. Slide into the oven for 25-30 minutes, until crispy.
3. Meanwhile, bring a pan of salted water to the boil, add the spaghetti and cook until al dente. Drain, reserving a cup of pasta water for later.
4. In a bowl, beat the egg yolks and cheese with a fork.
5. In a separate bowl toss the crispy chickpeas with the smoked paprika and plenty of salt and pepper.
6. Add your spaghetti to a pan with your egg yolk mixture, toss over a low heat until silky smooth, adding pasta water to loosen if needed. Season to ta...
