“Tradition always comes from change. Leaving what seems unchangeable is always an effort, but it’s part of evolution. For an italian, cooking pasta with the stove off can feel strange. But it only takes trying passive cooking to realize that it is not so, in fact it is actually a collective act to all live in a more sustainable way. New perspectives, new opportunities, new traditions await us: we only need to seize these opportunities”.
