#bakedtortilla trend is back so I made a sweet version, with yogurt honey and berries. In my opinion it makes a nice breakfast and snack. I love custard so this is totally right up my alley. Best to baked it the night before, refrigerate and enjoy in the morning. Should I make a savory version?
1 -9 “ low carb tortilla
1 cup sliced strawberries
2-3 eggs your choice
1/2 cup plain or vanilla greek yogurt
1 tsp lemon zest
1tsp vanilla
1 tbsp almond flakes
2 tbsp honey or other sweetener
Instructions
Preheat oven to 350F
In a bowl whisk the eggs with yogurt, honey, vanilla, and lemon zest.
Place tortilla in a baking pan.
Pour the mixture on top of the tortilla.
Arrange the strawberries over the custard. Sprinkle with almond flakes.
Bake for 25-30 minutes. Let it cool for 30 minutes before cutting.
