So happy with all the lovely feedback I’ve received on my most recent newsletter and the Longevity Recipes! As you probably already know, though, I like to schedule little “breaks” in my nutrition to allow for nostalgic foods—i.e., the things that remind me of growing up. This Korean Fried “Chicken” is right up that alley.
In writing the copy of the voiceover for my recipe instructional video, I debated whether I should even call it “chicken”—after all, I’m just using mushrooms, here. But, a couple things: (a) there are recipes out there that have “fried chicken” in the name even though they’re not chicken at all (like “fried chicken steak”), as the “fried chicken” refers more to the way the food is being cooked and not the particular protein; and (b) I DO want vegans—particularly newer vegans—to know how excellent a vegan alternative these oyster mushrooms make to chicken.
It remains a total mystery to me why non-vegans constantly badger us for, on occasion, wanting ...
