The pasta in this bowl is made of one single ingredient: red lentils.

It cooks up in about 9 minutes, and while it’s simmering, you can be sautéing a pan full of yummy veggies to top it all off.

A dish like this is such a wonderful go-to meal to make when the evening feels rushed, because it’s quick, easy, and unlike traditional pasta, it’s nutritious — packed with protein and iron.

For the veggies, use whatever you have on hand — they don’t necessarily have to be fresh veggies, either. So if you haven’t been to the market in a while, no worries.

Keeping frozen veggies on hand is an excellent way to plan ahead without actually planning ahead. In many cases frozen veggies are just as nutritious as fresh ones.
