I recently got some of the impossible meat from impossible_foods to play around with decided to make one of my favorites, pasta bolognese, and see how it works out. I made a classic bolognese sauce and then paired that up with a fresh tortellini that I filled with a filling of impossible meat and ricotta cheese. Really enjoyed trying this out.
