Pork brisket barkin like a big dawg! Yes pork brisket is a thing, and this one came out incredible thanks to my reynoldsbrands butcher paper. . . I seasoned it with salt and pepper and smoked it low n slow per usual. Once the bark had set, I used the slide cutter for a smooth cut and wrapped it in reynoldsbrands butcher paper to tenderize it without steaming out or ruining the bark that I'd worked so hard for.
