I seasoned it with my “pinky poppin umami” rub! If you haven’t tried it, WTF are you waiting for?! I then smoked it on the biggreenegg over jealousdevilcharcoal chunx and mesquite wood. I pulled it off at 110 and then got it back on for the reverse sear 🔥I rested it with some of my anchovy butter on top for added fat, flavor and umami!
