Full disclosure this brisket was undercooked by about 20 mins. Having said that, the flavor and bark was incredible. Rubbed in gustusvitae “TTOO” and cooked on my landmann_usa Vinson 200. Cooked with Hickory and Mesquite logs. Put it on at 8am and pulled it off at 530pm. Was a fukn exhausting cook but dammit the flavor and bark you get from a stick burner is hard to beat!
