Chicken 🍗 n greens 🥬 ya feel me?! #flavortrain . Tried something new with this bird... normally after brining I will air dry in the fridge or even add baking powder to my rub to get crispy skin. This time I treated it like I would if cooking a Peking duck. I poured boiling water over the chicken after I pulled it from the brine. This helps tighten up the skin on duck and hoped for the same effect. I patted it dry and then rubbed it like normal with gustusvitae “TTOO”. The result was perfect! Crispy skin and I saved time by not having to air dry it!
