Steak rubbed with gustusvitae this thing of ours . Bearnaise is simple AF. Shallots, vinegar, tarragon, butter and 3 egg yolks is all you need!!!! Reduce 2 oz vinegar with shallots and tarragon down to 2 tablespoons. Add that liquid to a double boiler but don’t let the water touch the bowl. Whisk in eggs... do not scramble. Remove from heat and go@back and forth if need be.
