Spicy Ebi Tonkotsu... took my traditional creamy tonkotsu broth and incorporated some shrimp powder, chili oil, shrimp oil, diced tomatoes and a shoyu tare. . . The tomatoes added extra umami and the shrimp flavor was perfect on the finish. Threw in some chashu pork because I had it and the shrimp and it were perfect dance partners.
