I rubbed it in gustusvitae “taste of Cali” and then smoked it on my traegergrills for about 20 before giving it a quick reverse sear in some belcampomeatco lard in my lodgecastiron the result was truly ridiculous. The flavor and marbling on this massive “pork-er” house chop was heavenly, and the crust it had was unlike anything else. Went perfect with some taters n green beans. I seasoned the potatoes with gustusvitae blue cheese salt. Dipped the pork in the last of my fivemonkeysbbqsauce scotch sauce (it’s fukn bomb).
