Not the prettiest picture but this fried chicken gumbo was out of this world. It all started with an organic pasture raised chicken from belcampomeatco I broke the bird down myself and burned the chunks to be fried later. I took the carcass and made my own stock. I combined flower and belcampomeatco pork lard for my roux. Mixed in the chicken stock along and bingo 🙌🏾 double coated the chicken before frying it up. Topped it all off with some chicken skin chicharrones.
