Pinch me...I’m on the cover of Highlands Ranch magazine sharing the love of my Mexican-American heritage, food, and family — all from my Highlands Ranch cocina.
I remember when I moved to Colorado 21 years ago I felt like I completely stood out. So many of the girls had blonde hair, blue eyes, super tall, and outdoorsy. Totally opposite of who I was. Growing up in El Paso, I was called “Guera” and felt like I never “looked Mexican”. Then, I moved to Colorado and felt very Mexican. Especially, moving to Highlands Ranch. I would joke and say that I’m the token Latina of Highlands Ranch — I have always been proud of my roots. As the years have gone by I have seen diversity in Colorado and I don’t feel like I am so unique anymore, and that is by far wonderful! We are the new face of America — diversity is here!
