I was out of ideas for dinner and luckily for me my monthly cabotcheese delivery arrived with this delicious Grilled Southwestern Stuffed Peppers recipe! The best part is my 12-year old daughter made these by following the recipe (all by herself). They are bell peppers stuffed with quinoa, pinto beans, and topped with #CabotCheese Delicioso!
