Everything is better with pico on top, right??? 😍 Green Chili Chicken on top of romaine, with homemade pico, avocado, persian cucumber, @sprouts plantain chips, and the dressing is a cilantro lime vinaigrette. I got the dressing recipe from @thecreativebite via Pinterest. Yummo!! ------------------------------- The green chili chicken is done in the crockpot. I took 3 large chicken breasts, put them in my crockpot, sprinkled with salt, 1 tsp garlic lovers seasoning, and 1 tsp cumin, and then poured 1 cup of @505southwestern hatch valley roasted green chilies on top (large jars from Costco). Then I let that cook on low for 4 hrs. Then shred with a fork. Voila!! Simple and easy. You can also use your favorite green salsa.
