Happy National Chia Day! This day recognizes the tiny, yet powerful chia seed that has earned a reputation as being one of the most nutrient-rich foods on the planet. To celebrate, mix up our PB&J Chia Pudding Parfait:
¼ cup chia seeds
½ cup mixed berries, frozen
2 tablespoons peanut butter
1 tablespoon maple syrup
½ teaspoon vanilla extract
1 ¼ cup almond milk, divided
1 large banana, frozen
2 scoops Neocell Super Collagen
In a mixing bowl, whisk chia seeds, berries, peanut butter, maple, vanilla and ¾ cup almond milk. Let mixture sit for 15 minutes - overnight, until chia is thick and creamy. When chia is ready to serve, in a high-speed blender, blend remaining ½ cup almond milk with banana and collagen. Mixture should be very thick and smooth. Divide chia mixture between two glasses, then top each with prepared smoothie. Serve! 🥄
