#ChefLamon Hurricane Irma was my first experience with Hurricanes in my life. After living in Florida for 3
years, I had heard many stories of Hurricanes and how everyone leaves the city to a safer
zone, but I hadn’t experienced the “need to leave the city” because a Hurricane is coming your
way! As Irma was heading towards Miami, and after spending the best part of a day arguing
with myself if I should leave or stay, I ended up flying to New Orleans.
From the moment I landed, I completely fell in love with the city! The architecture, the music, the
food! Everything was so beautiful, so artistic.
I tried a lot of dishes there, but the “Po’boy” sandwich really made an impact on me. That
sandwich is not only delicious but it also has a very particular story: it was originally a sandwich
that only poor people ate (the name “Po’boy” is actually a short version of “poor boy”). But it
