#BlackHistoryFact: In 1924, Jane E. Elliott founded the cafeteria system for Tennessee A&I which was the first established system at an HBCU in the south. The building, originally named New Women’s Industrial Building, was constructed in 1931 which housed the economics, domestic science, and commercial departments along with a laundry center and cafeteria. Currently, it is named Elliott Hall where the art & design, social work, and Africana studies units hold classes.  In 1947, it was renovated and the cafeteria was modernized and renamed in honor of Mrs. Jane Elliott, the cafeteria supervisor who received national attention by stressing the importance of proper selection of a diversified diet to meet students’ needs.
