Today is National Homemade Cookie Day, but around here that is kind of every week! I love making cookies so much! Today's recipe is simple Rainbow Sprinkles Vanilla Cake Mix Cookies. . . Now that companies are cheaping out on mix ounces, my go to 2 eggs + 1/3 cup of oil recipe is not producing as fluffy of a cookie. These came out a little thinner than normal recipes because the cake mix boxes are less ounces now--sneaky companies! If you use a 15.25 ounce box vs an 18.25 ounce box your cookies will be thinner, but still delicious! But, if you add 1/4 cup of flour to the mix you can also get fluffy cookies--I chose not to but found this tip after the fact. . . Regardless, these were delicious and tasted like soft, basic sugar cookies with a crisp edge.
