30-min Pickled Red Onionsđź§…
Pickled red onions are a great way elevating any dish! Tacos, toast, salads, & more. They’re SO EASY to make.
✨Ingredients:
•1 large red onion
•2 cups apple cider vinegar
•2 cups water
•1/4 cup cane sugar
•2-3 tbsp sea salt
•1 tsp black peppercorns
Peel and thinly slice a red onion; I used a mandolin, but you can use a sharp knife. Combine vinegar, water, sugar, sea salt, and peppercorns in a small saucepan over medium heat. Stir and heat until the sugar is disolved and the vinegar mixture begins to simmer. Sterilize a mason jar (I boiled mine, but you can simply wash in the dishwasher) and place the onions inside. Pour the vinegar on top, push the onions down to make sure they’re evenly coated, and tightly close the lid. Allow them to rest for 30 mins allowing them to marinade and pickle. After 30 mins they’re ready to eat! After the jar cools down, store refrigerated. The longer you wait, the pinker and brighter the onions will look. Enjoy!
