Gelatina de Pata is a Colombian handmade taffy-like sweet made using collagen extracted from the leg of a cow. The collagen is extracted by boiling the leg and then it is mixed with panela (raw sugar cane, similar to molasses) and hand pulled until achieving a stretchy spongy texture.
