EASY Gochujang Red Lentil Soup 🥣 follow sweetportfolio for more simple recipes
My grandma made lentil soup every week when I was growing up! I made her recipe my own by adding gochujang paste (I got mine at Trader Joe’s, but most Asian markets should sell it) and swapping green lentils for red lentils.
✨Ingredients:
•2 tbsp EVOO
•1 tbsp gochujang paste
•2 medium tomatoes
•Scallion (to taste)
•3 cups vegetable broth (or any other broth)
•2 cups water
•4-5 medium potatoes
•2 medium carrots
•1 tbsp sea salt
•1/8 tsp black pepper
•1 cup red lentils
Drizzle EVOO to a pan over medium-high heat and add the gochujang paste, stir, and add chopped tomatoes and scallions. Stir continuously and cook for 3-4 minutes until the veggies soften. Peel and chop potatoes & carrots into cubes. Pour vegetable broth and water, add cubed carrots and potatoes, and season with salt and pepper.
