Sustainability, culture, identity -- so much of it is wrapped up in the food we eat.
When we talk about food, it's about so much more than the actual ingredients. Just as important is the history of the dish — how did it come to be? What ingredients are in it, and why are they so important to the area? How does this dish connect to traditions in the area? When you're really trying to understand where you are, the context of what you eat matters. A lot.And of course, the now is important too. Were these ingredients grown locally? Were the farmers and cooks paid well? Do they have good working conditions?
Yes, it's so easy to just sit down in a restaurant and order food without thinking, but when it comes to really connecting with an area and fostering their sustainability, digging a bit deeper into what's on your plate can go a long way.
