RECIPE • soba and maitake mushrooms in soy broth. light, flavourful and quick to prepare, this bowl is ramen’s healthier cousin. 🍜 I could eat this everyday!
ingredients (4 servings):
2 garlic cloves, peeled and crushed
1 one-inch peeled ginger, thinly sliced
1/2 cup soy sauce
1/4 cup dried wakame
1 tbsp canola oil
4 bunches of maitake mushrooms
4 servings of soba
4 baby turnips or radishes, thinly sliced
4 large egg yolks
4 scallions, thinly sliced
1 tbsp toasted sesame seeds
boil garlic, ginger and 4 cups of water, reduce heat and simmer for 10 minutes. add soy sauce and wakame, set aside.
on an oiled skillet, fry up the mushrooms until crisp, for 10-12 minutes. set aside.
cook the soba in a pot of boiling salted water.
divide broth and soba among four bowls, top with mushrooms, turnips and egg yolks. garnish with scallions and sesame seeds.
