INGREDIENTS
1 cup Lundberg Organic Short Grain Brown Rice
1 ¾ cups water
2 eggs, beaten
1 cup broccoli, small florets
1 cup red cabbage, diced
1 cup spinach
½ cup frozen peas
½ cup carrot, diced
3 green onion stalks, sliced
2 Tbsp. tamari
1 Tbsp. toasted sesame oil
1 Tbsp. ginger, grated
1 Tbsp. garlic, grated
INSTRUCTIONS
1. Add 1 cup of Lundberg Organic Short Grain Brown Rice and 1 ¾ cups of water to a small saucepan and bring to a boil. Cover with a tight-fitting lid, reduce heat to low-simmer, and cook for 45 minutes. Uncover and transfer to a baking sheet or large bowl. Place in freezer for 15 minutes. Or skip this step and use day-old rice instead.
