Trust us, this recipe is egg-cellent. 🍳 We cooked California Red Jasmine Rice with smoked paprika and cayenne pepper, then layered it atop puff pastry with garlic asparagus, eggs sunny side up, and a sprinkle of cotija cheese. Yum! 🤤 ⁠ ⁠ INGREDIENTS ⁠ 1 cup Lundberg Organic California Red Jasmine Rice ⁠ 1 lb. asparagus, trimmed, sliced ⁠ 1 puff pastry sheet (8.65 oz.), frozen, thawed ⁠ 4 eggs, whole ⁠ 1 cup shallot, sliced ⁠ ½ cup cotija cheese ⁠ ¼ cup avocado oil, 2 Tbsp. reserved, 1 Tbsp. reserved, 1 Tbsp. reserved ⁠ ¼ cup garlic, sliced ⁠ 1 Tbsp. smoked paprika ⁠ 1 Tbsp. oregano, fresh, minced ⁠ ½ tsp. cayenne pepper, ground ⁠ Sea salt, to taste ⁠ Crushed red pepper, for garnish ⁠ ⁠ INSTRUCTIONS ⁠ 1.
