You say tomato, we say… time for crostini! For the perfect summer snack, simply top Thin Stackers with cherry tomatoes, stone fruit, basil, and a drizzle of whipped feta. Buon appetito! Recipe below 🍅😋👇
INGREDIENTS
1 pint cherry tomatoes, quartered
3 pieces stone fruit (peach, plum, etc.) cut into 1-inch chunks
1/4 cup basil, chopped (or 2 Tbsp. dried basil)
Dash of salt and pepper
12 Lundberg Red Rice & Quinoa Thin Stackers, cut in half
4 oz. feta
2 Tbsp. heavy cream
Microgreens for garnish (optional)
PREPARATION
1. Toss together cherry tomatoes, fruit, and basil. Season with salt and pepper. Set aside.
2. Using a stand mixer or hand mixer, whisk together the feta and heavy cream until completely combined.
3. Divide the cherry tomato mixture evenly between the Thin Stacker halves. Drizzle with whipped feta and season with salt and pepper. Sprinkle with microgreens, if desired. Serve right away.
