You say tomato, we say… time for crostini! For the perfect summer snack, simply top Thin Stackers with cherry tomatoes, stone fruit, basil, and a drizzle of whipped feta. Buon appetito! Recipe below 🍅😋👇 ⁠ ⁠ INGREDIENTS⁠ 1 pint cherry tomatoes, quartered⁠ 3 pieces stone fruit (peach, plum, etc.) cut into 1-inch chunks⁠ 1/4 cup basil, chopped (or 2 Tbsp. dried basil)⁠ Dash of salt and pepper⁠ 12 Lundberg Red Rice & Quinoa Thin Stackers, cut in half⁠ 4 oz. feta⁠ 2 Tbsp. heavy cream⁠ Microgreens for garnish (optional)⁠ ⁠ PREPARATION⁠ 1. Toss together cherry tomatoes, fruit, and basil. Season with salt and pepper. Set aside.⁠ ⁠ 2. Using a stand mixer or hand mixer, whisk together the feta and heavy cream until completely combined.⁠ ⁠ 3. Divide the cherry tomato mixture evenly between the Thin Stacker halves.
