INGREDIENTS
1 box Lundberg Organic Creamy Parmesan Risotto
4 oz. asparagus
¼ cup red bell pepper, sliced
¼ cup Parmesan cheese, shaved
2 tsp. chives
2 tsp. olive oil
Sea salt to taste
PREPARATION
1. Follow cooking instructions on Lundberg Organic Creamy Parmesan Risotto. When finished, set aside.
2. Add oil, asparagus, and red bell peppers to a small sauté pan on medium heat. Season with sea salt to taste. Sauté for 5 mins and set aside.
3. Add the risotto to a shallow bowl. Layer with asparagus and red bell pepper. Top with Parmesan cheese and chives.
