Congratulations to Alicia’s fellow alum, Shacafrica Simmons, owner and culinary architect of Chef Shac LLC. Her Soul Roll recipe appears with Alicia’s Perfect Vanilla Cake in the new Beard Foundation cookbook. Shacafrica believes that food can lift the spirit. Her soul rolls are a combination of Southern soul and a Chinese takeout classic, in which seasoned rice, black-eyed peas, aromatics, and collard greens are encased in an eggroll wrapper, deep-fried, and served with a sweet-and-smoky dipping sauce.
