I don’t really do a lot of “meal prep” on the weekend, but I DO start thinking about our dinner menu for the week! What are you making this week? . Right now, I’m thinking I need to make these quinoa bowls because I’ve been craving sweet potatoes lately! . This bowl is made with quinoa, roasted chickpeas, roasted sweet potatoes, and chopped purple cabbage. It all comes together with this tasty dressing 👇 . 1/3 cup cashews, soaked for 2 hours (see the blog for a quick soak method) 2 tablespoons olive oil 1/4 cup almond milk 1 1/2 tablespoons lemon juice 1 1/2 teaspoons balsamic vinegar 1/4 teaspoon salt (or to taste) .
