Right now, I’m thinking I need to make these quinoa bowls because I’ve been craving sweet potatoes lately!

This bowl is made with quinoa, roasted chickpeas, roasted sweet potatoes, and chopped purple cabbage. It all comes together with this tasty dressing 👇

1/3 cup cashews, soaked for 2 hours (see the blog for a quick soak method)
2 tablespoons olive oil
1/4 cup almond milk
1 1/2 tablespoons lemon juice
1 1/2 teaspoons balsamic vinegar
1/4 teaspoon salt (or to taste)

Blend it all up then drizzle generously 😍
