Little back story. One of the things we’re very proud of from our cuisine is our palate exploration of the bitter taste, from this Ginisang Ampalaya, to Pinakbet, to Pinapaitan (using goat's bile), we have come to love the fullness of it. Not only does Ampalaya tastes so good when it's cooked right, it also has plenty of nutrients. reggaejowns remembers growing up watching her grandmother from Pangasinan, growing the vegetable herself and taking its leaves to steep in it her tea. She said its really good for her DYAH-BEH-TEES and for producing red blood cells! Ginisang amapalaya is very popular back home because it is one of the cheapest vegetables you can find in the palengke, and for a small fruit to pack so much flavor.
