Alam mo ba ... did you know ... lechon is a dish that long predates the Spanish colonization of the Philippines. But because of the huge impact of Spanish on native languages in the Philippines, dishes made with roasted pig became known as lechon. There are so many different types of lechon -- it's the national dish of the Philippines! One of our favorites is lechon kawali. 🐷
As in many other Filipino dishes, the name contains the way the dish is cooked. In this case, Kawali is a Tagalog word that indicates something is cooked in a wok or deep-frying pan. Pork belly is boiled in a flavorful broth, then fried to get that beautiful crispy skin that makes it so special. It's crunchy and melts in your mouth all at once. 😋
