These winged bean vines are spilling over with pods daily and it’s time for me to start picking them. A little bit of fun fact on these versatile tropical legumes; all parts of this nutrient-rich plant are edible. Leaves can be eaten like spinach, flowers can be used in salads, tubers can be eaten raw or cooked. I personally like to pick them young and eat them raw with a sambal chilli or an Asian flavoured dressing. This four-angled fruit pods are one of the lowest calorie vegetables and contains proteins, folate and a large variety of vitamins so eat your winged bean guys!😄
