OK, this has been sitting in my drafts for so long and I'm finally ready to share it in my chipmunk voice because it didn't fit lol. Eight hour sourdough here's the recipe:
-125g active starter
-362g of warm water
-Mix 12 1/2g of salt
-500g of bread or unbleached flour
I set my oven to 500 and turn it down to 450 to bake. And then 400 at 40 min mark! And I've never used a Dutch oven! A baking sheet and a pan with water will create similar humidity 😊
