These were inspired by tater tots AND THATS OK !! Creamy in the center, crispy on the edges, covered in a lemony-honey-garlicky-thyme-filled brown butter sauce. And roasted in nutmeg. Always roasted in nutmeg. Add some roasted tomatoes for a hit of brightness and fluffy ricotta as the base, and you have my dream potatoes.
