Sorry for going all french on you today meaning dessert and sound of this video. But this classic dish is truly” formidable” I thought you might to make it this weekend before cherries ate gone! Full recipe below,
Cherry clafoutis
3 cups pitted fresh cherries
4 eggs
1/2 cup sugar plus 2 tbsp
1/2 cup flour
1 tsp vanilla
2 oz cognac or rum
Pinch of salt
1 1/2 cup milk
2 tbsp soft butter to grease the baking dish
1 tbsp powdered sugar for serving
Preheat oven to 350F degrees.
Butter and sprinkle sugar on a baking dish, shaking out the excess sugar.
Spread the cherries in the bottom of the baking dish.
Add the eggs and sugar to a bowl and whisk until the sugar is dissolved and the eggs are frothy.
Add the flour slowly while continually whisking vigorously.
Whisk in the vanilla, rum and pinch of salt.
Pour in the milk and whisk to incorporate. The batter will be thin and liquidy.
Pour the batter over the cherries.
Bake for 45 minutes or until the knife comes out clean
