Another green salad today! A combination of kale, asparagus, avocado and blueberries! I don’t know you, but we try to have some type of salad everyday! The asparaguses were super fresh so no problem of eating them uncooked!

2 cups Kale washed, rinsed, chopped and massaged with some oil
1 Avocado sliced
1 cup Fresh asparagus chopped
1 cup Blueberries
Pickled red onion
Cashews or other nuts

Dressing
.

1/4 cup Olive oil
2 tbsp Red wine vinegar
1 tbsp Dijon mustard
1 tbsp Blueberry syrup (optional) or maple
Salt and black pepper to taste

Nothing difficult, just build your salad, shake that dressing, drizzle, mix and enjoy. Add chicken or tofu for a full meal. For my taste some blue cheese would have been a great addition! Happy Monday!
