Zucchini and white bean pesto salad. Because we can eat beans year around. Great salad on it’s own or make it a side dish. Add grilled zucchinis to your drained Cannellini beans. Add a tbsp of fresh or store bought pesto. Combine well! Top with parmesan cheese and more basil. You can also roast, or air fry zucchinis with some olive oil, salt and pepper. That’s it.
