Roasted beets, chickpeas and kale salad! 🥗This salad came together in no time thanks to my previously roasted beets. All I did was roasting a can of chickpeas in air fryer, wash and chop kale and Voila! Super tasty salad that you can include in your menu. ⬇️ . . . 2 cups Lacinato kale 1 medium Roasted red beets 1 medium Roasted golden beets 1 can of chickpeas 1/2 Red onion sliced 2 tbsp Crumbled feta cheese . . . Dressing . 1/4 Olive oil 2 tbsp Apple cider vinegar 1 tbsp Maple syrup 1 tbsp Dijon mustard 1/2 Salt 1/4 tsp black pepper . . . You can roast chickpeas in the air fryer or oven at 400F for 15 minutes. Just mix them with olive oil and your favorite spices (garlic powder, onion powder, salt, black pepper, paprika, cayenne) They make a great snack too.
