Brussels sprouts and green beans salad! Why not both holiday favorite veggies in one side dish. So easy and delicious you can even make it a day ahead. Add dressing last minute and serve.

1/2 lb Brussels sprouts
1/2 lb greens beans
1 cup precooked bacon shopped
1/2 cup dry cranberries
2 tbsp pepitas
2 tbsp blue cheese or feta cheese
2 tbsp Pomegranates arils

Dressing
1/4 olive oil
2tbsp balsamic vinegar
1 tbsp honey
Pinch of salt and black pepper

Start by blanching Brussels sprouts and green beans in salted water for 5 minutes. Transfer immediately in iced bath so they can remain green. Once they are cooled down, start chopping and slicing and transfer in a bowl. Add bacon, dry cranberries snd pepitas. Mix all ingredients for dressing. Pour over the vegetables and combine well. Add blue cheese, pomegranate arils and serve! Enjoy! 😍
