Roasted beets and kale salad! 🥗I’ve been running like crazy today! This salad came together in no time thanks to my previously roasted beets. All I did was roasting a can of chickpeas in air fryer, wash and chop kale and Voila! Super tasty fall salad that you can include in your menu. ⬇️ . . . Lacinato kale Roasted red beets Roasted golden beets 1 can of chickpeas Red onion Crumbled feta cheese . . . Dressing . Olive oil Apple cider vinegar Maple syrup Dijon mustard Salt and black pepper . . . You can roast chickpeas in the oven also at 400F for 15 minutes. Just mix them with olive oil and your favorite spices. They make a great snack too.
