Zucchini and white bean pesto salad. Because we can eat beans year around. Great salad on it’s own or make it a side dish. If you have leftover grilled zucchinis you toss them with your drained Cannellini beans. Add a tbsp of fresh or store bought pesto. Combine well! Top with parmesan cheese and more basil. The other option is to roast, fry or air fry zucchinis with some olive oil, salt and pepper. That’s it.
