Hold on to it and once you get to the airport, follow signs for tax refund. I always look for global blue. Hand over your paperwork and select the card you want the refund to go to. If you’re at the counter with a person, they will let you know how much you will be refunded. It Italy, the refund was 13% of the purchase price but that also has a range.
