Because the last recipe I shared (my banana bread—WHICH YOU GUYS WENT BANANAS OVER LOL) was sweet, I wanted to develop a savory recipe, one that takes advantage of all the fresh summer produce that makes nutritious eating so much easier and delicious.   BUT, I also wanted to make something really easy—something pretty much anyone can make. Just chop up a bunch of fruits and veggies (eggplants and tomatoes are fruits!), add a little olive oil, salt, pepper, and dried herbs, and stick it in the oven for 45 minutes.   Now, we DO need something to bring it all together and THAT is where icelandicprovision’s Oatmilk Skyr is PERFECT.
