Peach and Beet Salad with Feta Cheese Ingredients (4 servings): - 2 peaches, sliced - 1 cup cooked beets, sliced - 1 cup cherry tomatoes, sliced - 1/4 red onion, sliced - 1/4 cup feta cheese crumbles Dressing: - 3 tbsp lemon juice - 6 tbsp olive oil - 2 tbsp fresh dill, chopped - Salt and black pepper, to taste Instructions: In a large bowl, whisk together the lemon juice, olive oil, chopped dill, salt, and black pepper until well combined.
