Chewy pumpkin cookies >>> cakey pumpkin cookies 🎃 most pumpkin cookies end up being thick and cakey. Don’t get me wrong, I love a good thick cookie from time to time. But if you’ve been craving chewy, fudgy cookies…this recipe is definitely for you.
They’re vegan, dairy free and eggless and basically taste like fall in cookie form. Forewarning…you will want to eat this entire batch in one sitting!
Here are a few more tips for chewy cookies:
1. Dry the pumpkin purée! This recipe calls for 1/4 cup (60g) and once dry it should be about half that.
2. Accurately measuring the flour is important for this recipe. Even 1-2 tbsp extra flour will result in thicker, puffier cookies.
3. Don’t chill the cookie dough! Doing so will prevent the cookies from spreading.
4. Once you roll the cookie dough into balls, gently press down on the top to flatten them into thick discs. This helps the cookies spread out more in the oven.
