My great grandmother used to make this every year for Christmas and it was my favorite growing up. Zupę Grzybową (mushroom soup). Couple carrots, some celery an onion and a few cloves of garlic. A mix of mushrooms - portobello, baby bellas and white shrooms. Half mushroom stock and half beef stock. Salt, pepper and a pinch of allspice. Simmer for an hour or two. Towards the end take some sour cream in a bowl, mix some stock to temper the sour cream and slowly mix it back in.
