Instructions:
1. Cook pasta according to package instructions. Reserve 1/2 cup of the pasta water, then drain the pasta.
2. Preheat the broiler on low. Place the quartered onion and garlic cloves on a small sheet tray, drizzle with 1 tablespoon of the olive oil, and sprinkle with salt. Broil for 2-3 minutes on low, until the onions and garlic are lightly charred.
3. In a blender, combine the charred onions, garlic, tofu, sundried tomatoes, nutritional yeast, lemon juice, 1/4 cup of reserved pasta water, and the remaining 3 tbsp of olive oil. Blend until smooth and creamy. Season with salt to taste.
4. Once the sauce is blended, pour it into a medium saucepan over medium-low heat. Stir in 1 cup of Daiya Dairy-Free Mozzarella Shreds and mix until the cheese is melted and fully incorporated into the sauce, creating a creamy, cheesy texture.
